Aged bone-in chops, pork neck and loin – for the pan and the grill. Pork from Croatian farms has more fat and a fuller flavour than industrial pork. We age bone-in chops for a few days so they stay juicy, cut ribs and belly for the grill or slow roasting, and knuckle for roasting or bean stew.
