About this cut
Picanha (rump cap) is a triangular muscle from the top of the rump covered in a fat cap that melts on the grill and gives incredible flavour. We sell it whole – roast it in one piece or cut it into Brazilian-style "horseshoes" for skewers.
How to cook it
Score the fat in a crosshatch, salt coarsely and start fat-side down. Slice against the grain.
