About this cut
Skirt steak is a thin, long cut from the diaphragm with pronounced grain and a very intense beef flavour. One of the most underrated steaks – great for marinades, tacos and fajitas.
How to cook it
Very high heat, 2 minutes per side. Always slice against the grain.
